Begedil Recipe (Malay Fried Potato Patties)

Begedil is a classic comfort food in Singaporean and Malay households. Made from creamy mashed potatoes — sometimes combined with minced beef or chicken — these golden patties are shallow or deep-fried until crisp. Commonly served with nasi lemak, soto ayam, or eaten on their own as a snack.

Ingredients

  • 500g potatoes, peeled and chopped
  • 100g minced beef or chicken (optional)
  • 2 shallots, chopped
  • 1 stalk spring onion, chopped
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 1 egg, beaten (for coating)
  • Oil for deep frying

Instructions

  1. Boil potatoes until fork-tender. Mash and let cool.
  2. Sauté shallots and minced meat until cooked. Cool slightly.
  3. Mix mashed potato with meat, onions, salt, pepper, and spring onions. Form small patties.
  4. Dip patties in beaten egg.
  5. Fry until golden brown. Serve hot.

Tips for Crispy, Fluffy Begedil

  • Let mashed potatoes cool completely before mixing — this helps patties hold together.
  • For a meatless version, add more spring onion or chopped coriander for extra aroma.
  • Fry over medium heat to avoid burning the outside before the inside is heated through.
